Located in the appellation of Cadillac Côtes de Bordeaux on the right bank of the Garonne river, Domaine les Carmels stands apart from your typical bordelais wine. Neither Sophie nor Yorick Lavaud come from wine families. They purchased their seventeen hectare property in 1999, and have planted only one-third to vines – the rest is dedicated to a variety of crops, or is left as open prairie or forest. Since no buildings existed on the land, they built their domaine from scratch, bringing with them their youthful, fresh perspective. They farmed organically from the beginning, becoming certified in 2013, and they follow biodynamic practices. They use gentle extractions, no new oak, and very low sulfur. Their Caprices will impress you with its freshness as well as the beautiful notes of blackberry and other dark fruits.
