After completing his studies in oenology at the Institute Jules Guyot at the University of Burgundy in Dijon, David Moreau spent several years working at estates in Burgundy such as Domaine Hubert Lamy and Domaine de la Romanée-Conti, and also at Château de Beaucastel in Châteauneuf-du-Pape. He also gained experience with Chardonnay and Pinot Noir in the New World at the small family-owned Neudorf Vineyards in New Zealand. In 2009 he took over a portion of his grandfather’s vineyard holdings, and immediately began to turn toward organic farming. He is assisted by his wife Blandine (who also studied oenology) in tending to his nine hectares of Pinot Noir and Chardonnay which are located not only in Santenay, but also in Meursault and Maranges. Many of these were planted by his grandfather in the 1960s. “Cuvée S” is a bottling named for David’s grandmother, Simone, who played a crucial, supportive role in the early development of his domaine.
