Guillaume Overnoy has been forging his own path since 2013 when, at age 19, he took over the domaine that had been established by his father Jean-Louis in 1982. He has long been inspired by his great-uncle Pierre Overnoy, a Jura legend, but also loves to experiment (he will tell you that sulfur-free wine making is “more difficult than it sounds!”) He relies partly on a long élevage on fine lees – since the 2019 vintage he has extended the aging of the whites to two years minimum (one year minimum for the reds).  The vines grow on gentle slopes of 250 to 320 meters above sea level on marl and limestone soils. Whites are pressed and racked, indigenous yeast fermentation begins in stainless steel tank and/or barrel, and the wines are then aged for 11-18 months. Reds are de-stemmed, with a cuvaison lasting three weeks. After pressing, they are aged for 11 months in barrel. Production can be limited due to challenging climatic conditions in the region, including regular spells of frost and hail.
